Crunchy Sweet Potatoes

Crunchy Sweet Potatoes

3 cans of sweet potatoes or 12 baked and mashed small sized sweet potatoes
1 ½ cup sugar
2/3 cup butter
4 eggs
2 cans sweetened condensed milk
½ tsp. vanilla

Combine in a large bowl.  Grease the large casserole pan and pour in sweet potato mixture.  

Bake at 350 degrees for 30 minutes.

Topping:
2 cups crushed cornflakes
1 cup chopped pecans
1 cup brown sugar
½ cup melted butter

Mix toppings and sprinkle over sweet potatoes and bake for 5 to 10 minutes longer or until crispy.  Can be made in advance and frozen.
